Tuesday’s (baking) Tip

Happy Luna New Year / AKA Chinese New Year. It’s the year of the Pig, which translates into a time of prosperity and good fortune. All I can say to that is Bring it!

As we embark on the New Year (Luna style), it seems like the perfect time to reboot if you haven’t exactly stuck to your New Year’s resolutions. If per chance you’re determined to eating healthier and need a slight nudge here’s a simple and healthy not to mention easy peasy recipe to keep you on point.

Filled with healthy ingredients, one of them being flax seed (which p.s. I highly recommend flax meal-less gritty and a smoother consistency) I think you will delight in the deliciousness of these yummy muffins.

Orange Bran Flax Muffins

Mix together:

  • Orange Bran Flax Muffins

In a large bowl combine:

1 cup oat bran

1 c wheat flour

1 c wheat bran

1 Tbsp baking powder

½ tsp salt

In a blender combine:

2 oranges quartered and seeded and skin removed

1 cup brown sugar  * (I use 2% low fat Buttermilk)

1 c buttermilk

½ c Canola oil

2 eggs

1 tsp baking soda

*1 cup dried cranberry

Preheat over 375 degree

Line two 12-cup muffin pans with paper liners or coat pans with nonstick spray.

In a large bowl combine dry ingredients. Set Aside. In a blender combine oranges, brown sugar, buttermilk, canola oil eggs and baking soda. Pour orange mixture into the dry ingredients. Mix well until blended. Stir in dried cranberries.

Divide batter evenly among the muffin cups. Bake 18 to 20 minutes or until toothpick inserted in the center comes out clean. Cool in the pans for 5 minutes before removing to a cooking rack.
