I LOVE Fall. How about you? There’s just something so wonderful about the season. The cooler air, the changing leaves and PUMPKINS! I mean seriously, who doesn’t love pumpkins?

Living in LA, we don’t  experience the cool crisp days associated with Fall until sometime in November. (Cold weather climates..Pleeeeezzzz don’t hate me for stating this fact).

That being said, the month of October brings with it a number of lovely fall mementos that one should not ignore but instead partake in …no matter what the official temperature reading is outside.

Here’s the short list of 5 fabulous fall items to enjoy right this very minute….

Number ONE! Decorate with pumpkins..it’s the perfect prop for outdoor decor and transitions perfectly right into Thanksgiving.

Number TWO: Bake or buy some YUMMY pumpkin baked goods…

Healthy Chocolate Chip Pumpkin Muffins
(recipe from https://www.littlebroken.com)
INGREDIENTS
·         1/3 cup coconut oil, in liquid form
·         1/2 cup honey
·         2 eggs
·         1 cup mashed ripe banana, about 2–3 bananas
·         1 cup pure pumpkin puree
·         1/4 cup milk
·         2 tsp. pumpkin pie spice
·         1 tsp. baking soda
·         1 tsp. vanilla extract
·         1/2 tsp. sea salt
·         1 3/4 cups white whole wheat flour
·         1/2 cup chocolate chips, semi-sweet or dark chocolate
INSTRUCTIONS
1.       Preheat the oven to 425 degrees F.
2.       Grease 12 cup muffin pan with non-stick cooking spray or if using liners, line with liners.
3.       In a large mixing bowl, whisk coconut oil and honey. Whisk in eggs.
4.       With a wooden spoon, mix in the mashed banana, pumpkin puree, milk, pumpkin pie spice, baking soda, vanilla extract, and salt.
5.       Add the flour and mix just until combined. Fold in the chocolate chips.
6.       Spoon the batter evenly into the prepared pan. You should be able to fill all 12 muffin cups.
7.       Bake for 5 minutes at 425 F degrees, then keeping the muffins in the oven, reduce the oven temperature to 350 F degrees, and bake for additional 17-20 or until toothpick inserted in the middle comes out clean.
8.       Place the muffin pans on a cooling rack to cool. Store cooled muffins, covered, at room temperature for up to 3-4 days.

Number  Three: Take a walk outside and ENJOY the changing colors of the season.

Pair your classic turtleneck with anything and everything: pants,skirts, jeans…it’s a closet staple that looks good on everyone.

Tuesday’s Tip =Oh-so-doable

Today it was “Back to School” for many children, and for the rest of us, it was “Back to Work” after the long Labor Day Weekend. In the spirit of back to school and more importantly the topic of children- sadly many of these children will return to their classrooms hungry. I think we can all agree, that no child in this country (or any country for that matter) should ever go hungry. One S’more Sunday

Happy Sunday!

As the long Labor Day weekend comes to a close, you may want to indulge in one last”S’more Sunday” or perhaps a “Monday Soiree” to help celebrate the end of Summer and/or the beginning of back to school, back to work or your regular weekday routine.

If you’re in the mood to put together something with little or no effort and make the evening FUN, might I suggest setting up your very own S’mores bar.

It’s as simple as opening a package (or packages) of graham crackers and marshmallows, setting out your choice of chocolate decadence,and provide a source of heat (melting station) complete with bamboo or branch skewers.

Not only is this Summer dessert delish but so easy to prepare and a perfect ending to the Summer Season.

S’mores are synonymous with Summer and let’s just say I’ve never met anyone yet that can resist a S’more! Enjoy!

Watermelon Wonders

The 4th of July (America’s Official Birthday) is this Thursday. (Yeah-.4 day weekend). For most of us, the 4th of July is the ultimate “Cook Out”…(translation) this is one of the easiest holidays on the planet in terms of required party prep and presentation.

The traditional fare (if your not Gluten Free, Dairy Free, Vegan, Lactose Intolerant etc.) consist of grilled burgers, hot dogs,chicken and brats (short for bratwurst) all served on your basic hot dog or hamburger bun and sprinkled or slathered with an assortment of condiments. In addition to the main dish(s), side dishes include the usual suspects: chips,dips and potato salad. You top off the whole meal with ice cream for desert or a beautiful assortment of fruit. Done and Done.

Nowww, should you desire to put a little more “festive” in the 4th of July festivities… I just so happen to have come across a bevy of pretty amazing “tutorials ” for wonderful and amazing things you can do with Watermelon. Jazzing up (Morning) Joe…

Coffee. Ohhhhh…. how we all love a good cup of coffee to start our day. What’s not to like about having a morning Cup of Joe? There’s the wonderful aroma,the warmth of the cup as you hold it in your hands and the added bonus, if you’re feeling a little sluggish- the kick of caffeine (unless you go decaff) .

I’m a “basic black” cup of coffee kinda girl- but as of late I am absolutely amazed at the number of add ins used to jazz up your Joe!.

If you’re looking to shake your morning up a bit by adding in a little extra somethin-somethin…here are a few simple and easy suggestions…Enjoy!

  1. Cinnamon. Cinnamon has one of the highest antioxidant levels of any spice, and adds a warmth to your already brewed coffee. Cinnamon can reduce nausea, inflammation, and rev up your metabolism. Added bonus – its antibacterial benefits help to ward off colds year-round!
  2. Butter. You’ve heard of bulletproof coffee, so now you can put it to the test. Adding one tablespoon of butter to your hot coffee (don’t try this with your cold brew) allows for the coffee to be released more slowly into your bloodstream, for a longer stream of energy throughout the day.
  3. Coconut milk. Use some of your leftover coconut milk from last night’s curry recipe to thicken your morning coffee. This dairy-free alternative adds a subtle coconut flavor, and also makes for a rich cup without using artificial creamer.
  4. Ginger. Christmas in a glass! Adding a small scoop of this warming spice, or infusing a small hunk of raw ginger into your coffee mimics a gingerbread latte like no other! Ginger is a powerhouse in soothing inflammation, promotes healthy cholesterol, and protects your liver – maybe the best thing after a night out.  
  5. Vanilla Extract/Vanilla Bean. A quintessential addition to your cup – vanilla and coffee just go together. Rather than using processed vanilla simple syrup, add a few drops of vanilla extract (remember – it is typically alcohol-based, so a little goes a long way). Or, drop a split vanilla bean pod into your pot as you brew to infuse flavor into your entire kettle.
  6. Peppermint Oil. Just a dash will do – adding peppermint oil to your drink can sub for a healthier alternative to a winter peppermint latte. However, it can be easy to overdo this, so just start with one drop and go from there. Peppermint contains a host of vitamins and aids in digestion, which is a perfect pair for coffee (known as a diuretic).
  7. Dark Chocolate. If you love mochas, this add-in is for you. Drop a few shavings or a small square of dark chocolate into your hot coffee, and let it melt slowly into your drink. You’ll get all the known antioxidant benefits from dark chocolate first thing in the morning, and the sweetness will help curb cravings for the rest of the day.
  8. Honey or Agave. Another sweet option – rather than choosing your usual white or brown sugar to stir into your coffee, try honey or agave nectar. This more natural form of sugar contains less sucrose than regular white sugar, which means its tastes sweeter and you’ll need to use less to get the sweet boost.
  9. Kosher Sea Salt. A pinch of kosher sea salt (very different from your usual table salt) in your cup can help offset some of the bitterness. It is recommended to put a pinch in your grounds before brewing for a smoother taste.
  10. Ice Cream. If you want to go for it, go for it! Hey, there’s no shame in indulging once in a while with a small scoop of vanilla ice cream in your coffee, turning your usual morning drink into an affogato. While this may not be the healthiest alternative, restricting your cravings too tightly can turn into indulging a little too much later.

Cutie-pie “Cakes” for Easter

If you happen to be looking for a sweet treat to make for Easter Sunday, I have an easy peasy suggestion that might just hit the mark. It’s my cutie- pie “cake”aka Easter Bunny Cake. It’s a breeze to bake and takes literally zero skills to assemble. All you need to do is make two cake rounds and cut up one round as the necktie. and ears and the other is saved for the face of the Bunny. I first made this cake about a thousand years ago for my sister’s children and it was such a hit they asked for it for about the next 10 years. I cut them off at the age of 18 and said we have got to move on to more adult fare…. (te-he) (Note:cakes for grown ups below for inspo)!

The cake recipe below goes together in a snap due to the use of one wonderful cake mix. No judging please. We’ve added a few bonus ingredients and uust between you and I ..No one will know the difference. Enjoy!

Cake

  1. 1 pkg cake mix
  2. 1 pkg pudding
  3. 4 eggs
  4. 1/3 cup butter, melted
  5. 1 cup milk

Frosting

  1. 1 cup shortening
  2. 1 cup margarine or butter
  3. 2 tsp vanilla
  4. 8 cups powdered sugar
  5. 1-4 Tbsp water
  6. Food coloring (opt)
  7. Candy, coconut, sprinkles, etc. for decorating (opt)

Instructions

  1. Mix together all ingredients for cake. Split in half and place 1/2 in each of two greased and floured 9-inch round cake pans.
  2. Bake at 350° for 20-25 minutes. Remove from oven and allow to cool.
  3. Remove cakes from pans. Leave one cake intact, and cut the other using the template below.
  4. Assemble bunny shape using template below. Set cake aside.
  5. In a mixing bowl, whip together shortening and butter. Add vanilla and mix well.
  6. Add powdered sugar in 1 cup amounts until frosting reaches desired consistency.
  7. Use frosting to decorate cake as desired.

Butter makes everything better! However, if you’re doing that whole “dairy free  thing” or perhaps just looking for an alternative to using butter I am here to give you options. Options are good? Right?! You choose. Butter,no butter whichever way you go these two tips will put you in the know. Enjoy.

National Ice Cream Day

It’s Sunday, my absolute favorite day of the week. Sunday seems like a fresh start filled with hope for the week ahead. Deemed as a “day of rest”  you don’t have to feel guilty for taking eeeeasy before you rev up and venture into Monday. That being said, it seems that Sunday’s just couldn’t get any better. Right? But wait, (as they say on those cheesy infomercials) THIS Sunday does bring with it an extra bonus -it’s officially…. National Ice Cream Day. How perfect is that! Smack dab in the middle of July-when temperatures are hoovering around 100 degrees today in LA and most of the country is not only hot but humid, doesn’t a dip into an ice cream shop to enjoy a cone in your favorite flavor just put you over the top on the delight meter!
