Morning Bake …Yummy Banana Bread

A little Sweet Treat to start your week…

If you’re in the mood for a little bit of baking this week, I have the perfect recipe to  quell your bread craving in the “sweetest” of ways.  Today, I’m happy to share one of my Go To’s when it comes to banana bread. This is a recipe I have been lovvvving for quite some time and once you bake it- I have a feeling you will  add it into your baking rotation ASAP.

It’s quick and easy and soooooo DELISH-not to mention it uses half the sugar and flour usually  required in other banana bread recipes without sacrificing flavor.  The addition of sour cream  makes this bread delectable and so yummy. Start stirring and mix up this wonderful banana bread -you will enjoy every morsel and be back for more. Promise!

 

Pre heat oven to 350 degrees

9×5  bread pan (Spray  bottom and sides with Pam Baking Spray)

Ingredients

1 stick butter (softened at room temp)

½ c sugar

2 eggs

2 large ripened bananas

1 tsp vanilla

1 c flour

1 tsp baking soda

2 T cocoa powder

½ cup sour cream

1 c mini choc chips

In a large bowl cream butter and sugar together

Stir in egg, bananas, sour cream and vanilla

Baking soda/cocoa and flour

Add chocolate chips

Pour batter into sprayed/greased and /or floured pans

*I use Pam Baking Spray on bottom and sides

Bake  40 to 50 minutes or until toothpick comes out clean

Let cool for about 10 minutes

 

 

***To make plain banana bread substitute cinnamon about 2 T instead of chocolate.

 

Additional options to mix in before baking would include:

Chopped walnuts or pecans

Raisins

Pretty Patios

Summer is just around the corner and I for one LOVE being outdoors. There’s  really nothing better than enjoying the soft breeze of warm weather days in addition to appreciating all those extra hours of  extended sunlight.

Bearing in mind that we will be “taking IT outdoors” as they say- it’s time to pretty up your patio space. I thought you might enjoy a glimpse at some of my favorite outdoor spaces just to get your inspiration going. Now if you’re thinking GREAT show me all these amazing spaces and NOW what am I to do to get something to look even remotely like any of these images.?Not to worry that this “patio prep” is going to be arduous… because it CAN be easy and affordable -all you need is a bit of resourcefulness and your imagination. If you have an unlimited budget-then by all means HAVE AT IT! If however you  need to keep the budget in check there are soooo many resources and ways that you can spruce up your outdoor area for next to nothing. I have found some amazing finds via Facebook Marketplace, Craigslist, Letgo and the usual obvious sources of  thrift shops and yard sales. If you’re willing to do a little leg work and some possible DIY-ing… you can pull together an outdoor area that is absolutely beautiful.

Hello Monday! A new week and I hope and pray this week will bring more peace and happiness to all .

These have been challenging times to say the least. We are still dealing with this horrible virus and just as we began to reemerge into some sort of “new normal” the tragic and senseless death of George Floyd  brought about  protests, violence and anger in our nation.

I do not consider violence a solution on any level but support Peaceful Protests for positive change. At the end of the day, I hope and pray that the world will become a kinder and more caring place in which we try to understand and settle our differences with understanding and love.

Wishing you a healthy. happy and productive week ahead with many moments filled with love. .

It’s Wednesday…How about some Watermelon CAKE!

Here’s an easy peasy and refreshing recipe today. It’s perfect for Summer and the best news of all ….is that you won’t even need to turn on an oven. It’s your basic  win-win.

Items that you’ll need to get your Watermelon Cake masterpiece prepped are:

  1. 1 or 2 large watermelons
  2. Sharp cutting knife and if needed a melon ball scoop.
  3. Additional assorted fruits for decorating and garnish.

Monday Moment of Reflection

R U Dealing with QC-Quarantine Confusion…

Is it me..or does everything seem just a bit off this week? Today is ONLY Thursday but for the life of me it feels like it should be Sunday or at the very least Saturday Granted this quarantine has really messed with any semblance of time and add into that  a holiday this past Monday and I quite frankly don’t really know what day it actually is. Perhaps I’m suffering from QC-Quarantine Confusion? It’s not really a thing but on the other hand MAYBE it is…  Are you having any problems keeping track of what day or even month it is..because not for nothing-  I sure am.

Wishing you a good day no matter what day it actually is and hopes to a happier and healthier season ahead.
