National Pancake Day is TODAY

Today is….ta dah dah dah National Pancake Day, one of the all time favorite comfort foods. I mean who doesn’t love pancakes? I have such happy memories of enjoying this delish dish growing up. Every Sunday my Dad would be at the griddle helm and make pancakes for the family. This was a major bonus for Mom as she could sit and relax and enjoy a cup of coffee while waiting for Dad to flip and serve his delicious pancakes. As  I scoured the web for the best of the best pancake recipes you can make at home, I have uncovered not one but 2 that should quell your pancake cravings.

Best Pancake Recipe  EVER

  • 1 cup milk
  • 1/2 cup sour cream
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • Butter for greasing the pan -about 3 tablespoons
  • Maple syrup for serving


  • In a large bowl, add the milk, sour cream, sugar, eggs, and vanilla. Whisk until combined. It’s ok to have small lumps of sour cream.
  • Add the flour, baking powder, and salt. Stir just until no large clumps of dry flour remain, trying not to over mix. The batter should be very lumpy.
  • Melt about 1/2 tablespoon of butter in a large non-stick skillet over medium-low heat until lightly bubbling and light brown.
  • Ladle the batter into the skillet making 3-4 pancakes (about 1/4 cup of batter each). Cook 3-4 minutes, until bubbles form on top of each pancake and the bottoms are golden brown.
  • Flip the pancakes. Cook 1-2 minutes, until the bottoms are golden brown.
  • Carefully wipe out any excess browned butter with paper towels. Repeat with the remaining butter and pancake batter.
  • Serve warm with maple syrup.

Greek Yogurt Pancakes

  • 2 eggs
  • 1 cups plain or vanilla Greek yogurt
  • 1/2 cup milk (I used almond)
  • 1 teaspoon vanilla extract
  • 1 cup white whole wheat flour (or 1/2 cup whole wheat flour and 1/2 cup white flour)
  • 1 TBSP sugar or sweetener of choice (optional)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • olive oil cooking spray
  • Toppings: blueberries, maple syrup, Greek yogurt, orange zest, nuts whipped cream


  • Whisk eggs, Greek yogurt, vanilla, and milk together until well combined and fluffy. Add flour, baking powder, salt and sugar, if desired, and whisk again until a smooth batter forms.
  • Drop by 1/3 cup onto heated griddle coated with butter. Cook until small bubbles form and pop on top of pancake. Flip and continue cooking on the other side until golden brown.
  • Serve warm with blueberries, maple syrup and nut topping.
