Oatmeal Chocolate Chip Cookie Recipe.
It’s easy to whip up and hedges on healthy. But let’s face it we’re talking cookies here and I for one am not about a “diet” version of any cookie. If you’re having a cookie it has always been my firm belief that you should HAVE A COOKIE and enjoy it! Trust me when I say: It’s better to have a real bonified full fat cookie than 10 diet cookie! Seriously…why oh why do they need to put a cookie on a diet anyway?!

Oatmeal Chocolate Chip Cookie Recipe
1 stick (+) 6 tbsp. Butter –softened to room temp
¾ cup firmly packed light brown sugar
½ cup granulated sugar
2 eggs
1 tsp vanilla
1 ½ all-purpose flour
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
3 cups Quaker Oats
½ cup to ¾ chocolate chips
¼ to ½ cup organic shredded coconut
¼ to ½ cup dried cranberries
*you can also add pecans or raisins instead of cranberries if you desire!
*Pre heat oven to 350 degrees
In a large, bowl mix together butter and sugar (brown and granulated) until creamy.
Add in eggs & vanilla.
In a separate bowl mix dry ingredients together: flour, baking soda, cinnamon and salt then gently fold into butter mixture.
Add in Quaker Oats until blended & then add Chocolate chips, dried cranberries and organic coconut.
Roll into 1 inch balls and chill in refrigerator for 30 minutes.
Place on cookie sheet and bake for 10-12 minutes at 350 degrees until lightly golden.
Take out of oven and let cool on rack.
