Let’s Bake a Lovely Lemon Olive Oil Cake

I woke up this morning with a bug to bake.  Maybe it was due to yesterday’s phone call from my friend Sydney who called to  inquire if I had ever made an Olive Oil cake? Although I didn’t have an Olive Oil cake recipe in my repertoire, I was motivated to try my hand at this Olive Oil Cake business. To my surprise and delight-I found an easy peasy recipe (via Eat, Live, Run)  that is not only super simple but beyond delish.

As the saying goes…when life throws you lemons make lemonade OR perhaps a  Simple Lemon Olive Oil Cake.  I hope you find this recipe as yummy as I did and it puts some SPRING in your step!

Ingredients

4 large eggs

1 cup sugar

1/2 cup Extra Virgin Olive Oil

2 1/2 to 3 Tablespoons lemon juice ( I use freshly squeezed)

1 cup flour

1/2 tsp baking powder

1/4 tsp salt

Powdered Sugar

 

Pre -heat Oven to 350F *

Grease an 8 inch cake pan (line with wax paper) and  also grease wax paper

**OR using a Springform pan-Grease bottom  of pan ,line with wax paper  and grease wax paper as well.

Mix together: Eggs & Sugar at high speed for 5 to 7 minutes until light and fluffy

Using a large spatula gently fold in olive oil and lemon juice into egg mixture

With same spatula add in flour and baking powder and salt. (Do not over mix)

Pour cake batter into prepared pan and gently tap on a solid surface to remove some of the larger bubbles

Bake 40-45 minutes until top is a light brown and a toothpick comes out clean when inserted.

Remove from oven and let cool for 10 minutes.

Gently run a butter knife along edges of the cake to release it from pan.

Remove wax paper from bottom.

Cool completely and then sprinkle lightly with powdered sugar.

Enjoy!

National Chocolate Chip Cookie Day -YAY!

Today is National Chocolate Chip Cookie Day.

YAY!

The chocolate chip cookie is something to celebrate. I can’t think of anyone who doesn’t love a chocolate chip cookie. And, if your chocolate chip cookie happens to be hot out of the oven and homemade -all the better.

Most of us have our “go to”  chocolate chip cookie recipe BUT let’s face it, we’re always on the lookout for the absolute BEST  version.

Years ago, I came across a recipe in my local newspaper  ( The St. Louis Post Dispatch) posted in the FOOD section and provided by a reader in the area.  Pre Google and Pinterest, I clipped this little ditty out of the paper and have kept it in my recipe box ever since. (Yes, I STILL have a recipe box. No judging). Tee he.  I’m here to tell you that this little baby is THE ABSOLUTE BEST CHOCOLATE CHIP COOKIE RECIPE EVER! There-I said it! I’m posting it on this National Chocolate Chip Cookie Day– so you too can give it and go and let me know, if you feel the same after baking a batch or two or ten. I’ve given this recipe to many a friend and they all stand by it today. I hope you enjoy and have a fabulous National Chocolate Chip Cookie Day. If it’s to late to bake today…remember there’s always tomorrow- because every day  is a good day, to bake and eat a  homemade chocolate chip cookie.

The BEST Chocolate Chip Cookie Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup salted butter, slightly melted
  • ¾ cup light brown sugar, packed
  • ⅔ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar (don’t ask why-just put it in-promise this is a winner)
  • 1 large egg
  • 2 cups semisweet chocolate chips
  • Coarse sea salt

Directions

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a medium bowl mix together the flour, baking soda and the salt: Set aside.
  3. In a large bowl beat together the butter, sugars, vanilla extract and the vinegar until smooth. Beat in the egg just until combined.
  4. Mix the flour mixture into the wet mixture just until combined. Stir in the chips.
  5. Using a large cookie scoop (about 2 rounded tablespoons) drop about 3 inches apart onto cookie sheet.
  6. Bake for 8 to 10 minutes, they will look light brown around the edges and will look underdone in the center. Remove from the oven and immediately sprinkle each cookie with a little sea salt. Allow to sit on the sheet for 10 minutes before moving to a rack to cool.

Time for Quiche…. Capiche

Happy Good Friday/ Passover and TGIF!  Whichever day you’re celebrating today I thought you might enjoy a weekend dish that is not only easy to make but absolutely delish.

*I originally posted this dish in 2020  and it proved to be a fan favorite so if per chance you’re looking for the perfect dish to serve… here it is again. 

Spinach, Sweet Potato, Onion and Feta Quiche

If you’re looking for a really easy weekend brunch or breakfast dish that is Delish and super easy to put together, I just may have the perfect recipe. This is one I literally threw together a few weeks ago and it was inspired by a morning scramble I made for a friend of mine a few months before this whole quarantine business began. On any given weekend I usually abandon  my usual weekday morning protein drink and opt for food that I can actually chew.

Bearing in mind I still want to eat healthy I have found the following ingredients to be an absolute win win when it comes to flavor and delish-ability:

Quiche Recipe

Pre heat over to 350 degrees

In a large non stick pan saute:

  • 1-2 T Coconut Oil
  • 1/2 red onion chopped
  • 1/2 sweet onion chopped
  • 1 medium size shallot chopped

Stir gently over low to medium heat, stirring often and keeping covered to allow the moisture  from the onions to release.

  • When onions are soft add in 4-5 cups cleaned organic spinach
  • When spinach is completely wilted stir together to incorporate onions and spinach.
  • Turn off heat. Keep covered and let  rest for about 5 minutes

In  separate bowl whisk together:

  • 4 Eggs ( I use organic and cage free)-I promise they taste 10 times better
  • 1 can Carnation Evaporated milk (for quiche)
  •          You can use Carnation Evaporated Milk “Lactose Free” if needed   
  • 1/4 to 1/2 cup crumbled feta
  • 1/2 to 1 cup cooked sweet potato
  • 1/4 tsp salt
  • 1/4 to 1/2 tsp pepper
  • 1 Deep Dish pie crust

Pour spinach and onion mixture into the bottom of a prepared pie crust (see notes on pie crust prep)

Pour egg mixture over spinach and onion.

Put pie crust on cookie sheet and bake  for  another 30 to 45 minutes until  Quiche is firm/translation-liquid is set)

Take out of oven and let sit for 5-10 minutes.

Serve warm with remaining sweet potato .

Pie Crust

(You can use ready made or if you wish -make your own)

Pre bake pie crust  for 20 minutes at 350 degrees.

In Pre baking your crust take a sheet of  wax paper to cover the bottom and sides.

Fill well of pie crust with beans  and put into oven to cook for 15 to 20 minutes.

This ensures that your crust won’t be soggy on the bottom after the Quiche is fully cooked.

 Sweet Potato (s)

Peel and dice sweet potato (I use about 4 -5 sweet potatoes-you can use any leftover potato as a side dish and serve it with the quiche or mix with the scrambled eggs at another time).  Slice into small bite size pieces.

  • Spray a large  cookie sheet with Cooking spray or use olive oil to lightly coat potato.
  • Salt and pepper to taste .
  • Cook at 425 degrees for about 20 minutes  or until soft and slightly golden brown

The Perfect Scramble 

Use all the ingredients above  omitting the crust and carnation evaporated milk.

Loving…My Favorite Oatmeal Chocolate Chip Cookie Recipe

To get your week started on a sweet start, I thought  you might enjoy my absolute favorite:

Oatmeal Chocolate Chip Cookie Recipe.

It’s easy to whip up and hedges on healthy. But let’s face it we’re talking cookies here and I for one am not about a “diet” version of any cookie. If you’re having a cookie it has always been my firm belief that you should HAVE A COOKIE and enjoy it! Trust me when I say: It’s better to have a real bonified full fat cookie than 10 diet cookie! Seriously…why oh why do they need to put a cookie on a diet anyway?!

I hope you enjoy this recipe and have a sweet week ahead.

Oatmeal Chocolate Chip Cookie Recipe

1 stick (+) 6 tbsp. Butter –softened to room temp

¾ cup firmly packed light brown sugar

½ cup granulated sugar

2 eggs

1 tsp vanilla

1 ½ all-purpose flour

1 tsp baking soda

½ tsp salt

1 tsp cinnamon

3 cups Quaker Oats

½ cup to ¾ chocolate chips

¼ to ½ cup organic shredded coconut

¼ to ½ cup dried cranberries

*you can also add pecans or raisins instead of cranberries if you desire!

*Pre heat oven to 350 degrees

In a large, bowl mix together butter and sugar (brown and granulated) until creamy.

Add in eggs & vanilla.

In a separate bowl mix dry ingredients together: flour, baking soda, cinnamon and salt then gently fold into butter mixture.

Add in Quaker Oats until blended & then add Chocolate chips, dried cranberries and organic coconut.

Roll into 1 inch balls and chill in refrigerator for 30 minutes.

Place on cookie sheet and bake for 10-12 minutes at 350 degrees until lightly golden.

Take out of oven and let cool on rack.

Enjoy!

Tuesday Tip..A tale of 2 Pumpkin (recipes)

Pumpkin time is here!!! Yay and double yay. I admit that I am a HUGE fan of  “all things  pumpkin.”

Pumpkins have  officially made there Grand Entrance  in stores  recently and just seeing them on display makes me H.A. P.P.Y.    I have always loved EVERYTHING  about Pumpkins. The color, the many shapes and sizes, in addition …to their sudden appearance is a welcome assurance that Fall is officially here.

Once I see the first pumpkin in stores, I become a bit obsessed and can’t wait to bake with this favorite ingredient of the season. To get the baking  inspiration going this year, I am sharing  not one but two of my favorite Pumpkin recipes. I think you will find them fast and easy to make and most importantly…Delish! Enjoy!!!

Pumpkin Granola

Prep time: 5 minutes | Cook time: 45 minutes

Makes 1 large batch

Ingredients:

3½ cups rolled oats
¾ cup chopped walnuts or pecans
½ cup pumpkin seeds
1 teaspoon cinnamon
½ teaspoon ground ginger
½ teaspoon ground cardamom
¼ teaspoon ground clove
¼ teaspoon salt
cup + 1 Tablespoon maple syrup
cup pumpkin puree
¼ cup neutral cooking oil (avocado, grapeseed, etc.)
½ cup dried cranberries or golden raisins

Preparation 

Pre-heat oven to 325 degrees (F). Line 2 standard-sized baking sheets with parchment paper.

In a large bowl, stir together oats, nuts, pumpkin seeds, spices and salt until well combined.

In a small bowl, whisk together maple syrup, pumpkin puree and oil. Pour the wet mixture over the dry ingredients and stir well to coat.

Spread half of the granola on each baking sheet in a single even layer. Bake for 40 minutes, stirring the granola gently at the 20-minute mark (skip the stirring if you prefer larger chunky pieces in your granola). After 40 minutes, gently stir in half of the cranberries or golden raisins to each tray and bake for 5 minutes more. Remove trays from the oven and let the granola cool completely before transferring it to a large glass jar or other airtight container for storage. (Note that when granola is finished cooking, it may still be slightly sticky. It will harden as it cools.)

 OR

Pumpkin Chocolate Chip Cookies

The BEST Pumpkin Cookies (and  I am NOT overstating) .  Recipe adapted from iheartnaptimeblog.com

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Servings: 24

   Ingredients 

1 cup pumpkin puree, canned

1 cup sugar

1/2 cup vegetable oil, can sub with canola oil

1 large egg

1 Tablespoon vanilla extract

2 cups all purpose flour

2 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon pumpkin spice ( add  extra teaspoon if you like a more robust flavor)

1/2 teaspoon fine sea salt

1-2 cups  semi sweet chocolate chips

          Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or a baking mat. Set aside. Combine pumpkin, sugar, vegetable oil, vanilla and egg in a large bowl. Mix until smooth.
  • Add flour, baking powder, baking soda, cinnamon, pumpkin spice and salt. Mix just until you see a little flour left. Finally stir in chocolate chips and stir just until combined. Do not over mix.
  • Drop cookies by the spoonful about 2 inches apart, or use a medium cookie scoop. Add a few extra chocolate chips to the tops if desired. Bake for 10-13 minutes, or until a toothpick comes clean and the bottoms are lightly brown. Check one and bake for 1-2 more minutes if the center is not quite done.
  • Remove from oven and allow to cool on pan for 5 minutes and then transfer to a cooling rack.
Store in a covered container for up to 4 days or freeze up to 3 months. These cookies taste best cooled and taste even better the next day. The longer they sit the more the flavor comes out.

One Sweet Cookie-JP’s Cream Cheese Chocolate Chip Recipe

One sweet story about one sweet cookie!

This recipe was given to me by a very dear friend (thank you my dear Jill Petersen) who shared her secret cookie recipe with me…. many, many years ago. Ever since I made the first batch, it has been a favorite of everyone that has tasted them. They are bite sized treats and friends have been known to eat more than a few in one sitting…they’re that good.  This recipe has certainly stood the test of time (over 30 years) as friends still request them when I’m delegated to desserts at any gathering. Quick tip:  Don’t overbake or overmix and I think you will find that these cookies really do melt in your mouth. Enjoy and thank you Jilly…P.S. We remain the dearest of friends  after all these years. Sweet!

 

Cream Cheese Chocolate Chip Cookies

Preheat Oven to 350 Degrees

Cream together in a large bowl:

  • 1 Cup margarine (room temp)

       (*Don’t shot me…Butter doesn’t seem to work as well)

  • 1 Cup Sugar
  • 3 Ounce Cream Cheese (full fat) @ room temp

Add in:

  • 2 teaspoon Orange Zest
  • 2 teaspoon vanilla
  • 1 teaspoon salt

Gently fold in

  • 2 Cup Flour
  • 6 oz. Chocolate Chips

In a large bowl cream together: Margarine, sugar and cream cheese until mixture is smooth. Add in the zest of 1 orange, vanilla and salt. Gently fold in flour till mixture is completely blended together and finish by adding in Chocolate Chips.

Scoop a spoonful of mixture and place on baking sheet. 12 cookies per baking sheet.

Bake at 350 degrees for 10-12 minutes or until the bottom of the cookie is a light brown.

Batch should make approximately 4 dozen bite size cookies.

Midweek Moment…A Sweet (& Healthy) Cookie Recipe

Happy Wednesday! I have a homemade “Sweet Treat”  recipe to  help get you through Hump Day!

This recipe is  fast, easy, delicious and hedging on healthy. I whipped up a batch of these cookies last  Sunday night, (when outside temps finally dipped below the triple digit mark and it was cool enough to even consider turning on an oven and doing some baking).

Full Disclosure: This recipe is  a modified version of your Basic  Oatmeal Cookie Recipe BUT with a few deviations to give it a Tasty lift. Enjoy!!!!

 

         

Summer’s Sweet Surprise The  Oatmeal Cookie …(Revised) 

 

Preheat oven to 350 degrees

  • 1 stick (1/2 cup) + 6 tbsp. Butter (softened at room temp)
  • ¾ cup firmly back light brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • ¼ tsp salt
  • 3 cups Quaker Oats ( Quick 1 minute Oats)
  • Additions
  • (add as much or as little as you like of each)
  • ½ to 1 cup organic coconut
  • 1 cup chocolate chips or dark chocolate chips
  • ½ cup organic dried cranberries
  • ¼ cup chopped pecans

In a large bowl beat butter (softened at room temp) then mix in brown sugar and white sugar until creamy mixture.

Add in eggs and vanilla until thoroughly mixed all together.

Add combined flour, baking soda, cinnamon and salt.

Add in Oats until everything is blended- no need to over stir… just mix until everything is combined.

Mix in additions: coconut, cranberries chocolate chips or dark chocolate chips/and pecans.

Chill mixture for an hour. (Still in bowl and cover with saran wrap)

Take out of fridge and roll into 1 to 2 inch balls (depending on how large you like your cookies)

Place on cookie sheet and lightly flatten top of cookie with the palm of your hand.

Bake 8-10 minutes or until a very light golden brown.

Put on rack and let cool.

Store in air tight container.

Roll and chill in fridge  for at least an hour before baking.

Blueberry Pie….for the 4th of July

Blueberry Pie for the 4th Of July

11 Ingredients

Produce
  • 1 cup Blueberries, fresh
  • 1 tsp Lemon Peel
  • 1 cup Raspberries, fresh
  • 4 cups Strawberries, fresh
Condiments
  • 1 tbsp Lemon juice, fresh
Baking & Spices
  • 1/4 cup Cornstarch
  • 3/4 cup Granulated sugar
  • 1 tbsp Sparkling sugar, coarse white
Bread & Baked Goods
  • 2 Count Pillsbury 1 box (14.1 oz) refrigerated Pillsbury pie crusts, refrigerated
Liquids
  • 1/2 cup Water

Heat oven to 450°F. Make 1 crust as directed on box for One-Crust Pie, Baked Shell. Cool completely, about 35 minutes.

Meanwhile, unroll second pie crust on work surface. With 4 1/2-inch star-shaped cookie cutter, cut 1 large star. With 2-inch star-shaped cookie cutter, cut 12 small stars. Place stars on ungreased cookie sheet; sprinkle 1 tablespoon sparkling sugar on tops of stars. Bake 5 to 8 minutes or until golden brown; cool. Set aside.

In 2-quart saucepan, beat 3/4 cup granulated sugar, the cornstarch, water and lemon juice with whisk. In small bowl, mash 1 1/2 cups sliced strawberries with fork to make 1 cup mashed strawberries; stir into pan. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir one minute. Pour into medium bowl; cool 5 minutes.

Remove 1/3 cup cooked strawberry mixture to small bowl, and stir in 1 cup blueberries. To remaining cooked strawberry mixture, fold in remaining 2 1/2 cups sliced strawberries and the raspberries.

In small bowl, mix cream cheese and lemon peel until well blended. Spread in bottom of cooled baked pie shell. Spoon strawberry-raspberry mixture into pie shell, pushing berries toward outside edges to leave 3-inch circle in center. Scoop blueberry mixture to fill center circle.

Refrigerate 3 hours. To decorate, place 1 large star in center and smaller stars around edge of pie.

Summertime Salad… aka “There was a Sale on Kale”

It’s hot in LA today and I do mean H.O.T. Translation: (No one is turning on an oven) because we’re in a major heat wave and it feels like an oven outside -so why torture ourselves and continue the heat indoors.

That being said I have a perfect recipe that requires ZERO cooking and just a bit of dicing and slicing -but not enough that you’re going to break a sweat. Soooo if you’re in the mood for a healthy and YUMMY salad.. here is a Kale concoction that I think  you will enjoy!

Summertime Kale Salad

Summertime Kale Salad

  • Organic Kale (pre washed bag) (chop in food processor)
  • Organic Persian Cucumber (1 large whole chopped)
  • Organic small Cherry Tomatoes (10-12 chopped in halves)
  • Organic Carrots (Grate 2-3)
  • Dried Cranberries (1/2 cup)
  • Sunflower Seeds Unsalted Roasted (1/2 cup)
  • Feta (1/4 to ½ cup)
  • Garbanzo Beans 1 can (rinsed in  a meshed strainer prior)  before adding to salad

Portions of each item can be increased or decreased as per your preference.

Combine all ingredients and mix together gently

 *All items listed are available from Trader Joes

Salad Dressing

  • Extra Virgin Olive Oil  (1/2 cup)
  • 3 T Apple Cider Vinegar
  • 1 T Dijon
  • 1 T Honey

Shake in a jar until combined. Pour over salad  

Drizzle extra honey on top if desired

(Store remaining dressing in fridge)
