One Sweet Cookie..and recipe included:
I posted a recipe on my Facebook page this morning, in answer to my dear friend Mary Uhlich’s, request to participate in a Christmas Cookie Exchange. The Facebook response to my recipe has been so warmly received I thought best to post it on my blog so you won’t miss this yummy dessert addition. It’s the perfect compliment for Thanksgiving or Christmas, as this Biscotti is filled with cinnamon and sugar -two ingredients synonymous with the holidays.
This is the perfect holiday cookie to serve to your guests and so easy to pack up and go- as a lovely parting gift.

RECIPE
Christmas Cinnamon Roll Biscotti
Preheat oven to 350 degrees
Crème together:
• 1 stick unsalted butter (1/4 pound)
• 2/3 cup white Sugar
• 1/3 cup brown sugar
• 3 Large eggs
• 2 tsp vanilla
Add in Dry ingredients:
• 2 ¾ cup flour
• 2 tsp cinnamon
• 1 tsp Baking Powder
• ¼ tsp. salt
Chill dough for an hour.
Remove from fridge and roll our flat:
Mix together:
• ¼ cup Sugar
• 2 tsp cinnamon
Sprinkle dough with cinnamon & sugar mixture.
Roll into a log
Put onto baking sheet covered with a Silpat baking mat
Bake for 30 to 35 minutes until a light golden brown
Cut biscotti on the diagonal and bake each cookie by laying it on its side for 5 minutes
Take out of oven and flip cookie on its other side
Cool for another 5 minutes
Take out of oven and cool completely on wire rack.
Frosting:
(2 options)
For Cinnamon roll lovers…use the first frosting:
Glaze (mix together) and drizzle over cookie.
• 2 Tablespoons Melted Butter
• 2 Tablespoons Milk
• 2 Cup Confections Sugar
OR
Melt White chocolate chips at low heat in a glass bowl over double boiler,
When chocolate is completely melted put into a plastic sandwich bag and cut tip on one end f the bag.
Drizzle chocolate over cookie
Let glaze and or white chocolate set completely before packaging.
