One Sweet Cookie-JP’s Cream Cheese Chocolate Chip Recipe

One sweet story about one sweet cookie!

This recipe was given to me by a very dear friend (thank you my dear Jill Petersen) who shared her secret cookie recipe with me…. many, many years ago. Ever since I made the first batch, it has been a favorite of everyone that has tasted them. They are bite sized treats and friends have been known to eat more than a few in one sitting…they’re that good.  This recipe has certainly stood the test of time (over 30 years) as friends still request them when I’m delegated to desserts at any gathering. Quick tip:  Don’t overbake or overmix and I think you will find that these cookies really do melt in your mouth. Enjoy and thank you Jilly…P.S. Cream Cheese Chocolate Chip Cookies

Preheat Oven to 350 Degrees

Cream together in a large bowl:

  • 1 Cup margarine (room temp)

       (*Don’t shot me…Butter doesn’t seem to work as well)

  • 1 Cup Sugar
  • 3 Ounce Cream Cheese (full fat) @ room temp

Add in:

  • 2 teaspoon Orange Zest
  • 2 teaspoon vanilla
  • 1 teaspoon salt

Gently fold in

  • 2 Cup Flour
  • 6 oz. Chocolate Chips

In a large bowl cream together: Margarine, sugar and cream cheese until mixture is smooth. Add in the zest of 1 orange, vanilla and salt. Gently fold in flour till mixture is completely blended together and finish by adding in Chocolate Chips.

Scoop a spoonful of mixture and place on baking sheet. 12 cookies per baking sheet.

Bake at 350 degrees for 10-12 minutes or until the bottom of the cookie is a light brown.

Batch should make approximately 4 dozen bite size cookies.

Midweek Moment…A Sweet (& Healthy) Cookie Recipe

Happy Wednesday! I have a homemade “Sweet Treat”  recipe to  help get you through Hump Day!

This recipe is  fast, easy, delicious and hedging on healthy. I whipped up a batch of these cookies last  Sunday night, (when outside temps finally dipped below the triple digit mark and it was cool enough to even consider turning on an oven and doing some baking).

Full Disclosure: This recipe is  a modified version of your Basic  Oatmeal Cookie Recipe BUT with a few deviations to give it a Tasty lift. Enjoy!!!!

 

         

Summer’s Sweet Surprise The  Oatmeal Cookie …(Revised) 

 

Preheat oven to 350 degrees

  • 1 stick (1/2 cup) + 6 tbsp. Butter (softened at room temp)
  • ¾ cup firmly back light brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • ¼ tsp salt
  • 3 cups Quaker Oats ( Quick 1 minute Oats)
  • Additions
  • (add as much or as little as you like of each)
  • ½ to 1 cup organic coconut
  • 1 cup chocolate chips or dark chocolate chips
  • ½ cup organic dried cranberries
  • ¼ cup chopped pecans

In a large bowl beat butter (softened at room temp) then mix in brown sugar and white sugar until creamy mixture.

Add in eggs and vanilla until thoroughly mixed all together.

Add combined flour, baking soda, cinnamon and salt.

Add in Oats until everything is blended- no need to over stir… just mix until everything is combined.

Mix in additions: coconut, cranberries chocolate chips or dark chocolate chips/and pecans.

Chill mixture for an hour. (Still in bowl and cover with saran wrap)

Take out of fridge and roll into 1 to 2 inch balls (depending on how large you like your cookies)

Place on cookie sheet and lightly flatten top of cookie with the palm of your hand.

Bake 8-10 minutes or until a very light golden brown.

Put on rack and let cool.

Store in air tight container.

Roll and chill in fridge  for at least an hour before baking.

Make some Brownie Points this Halloween!

Most of us LOVE a good brownie and if per chance that brownie is served in an Oh SO Fun and festive way sayyyyyyy for Halloween per chance then I think  we are talking a basic win win sweet situation.

Today’s blog is featuring some  yummy brownie recipes that should do the TRICK  to make everyone in your home Halloween Happy and maybe even get you some extra “brownie points!”

Each recipe is easy and oh so doable. I’ve also included the number of ingredients needed in each – just to give you a little heads up on how much stirring you’re going to be doing.

Marshmallow Ghost Brownies (15 Ingredients)

Pumpkin Brownies (2 Ingredients)

Pumpkin Brownies (Vegan)

1 (18 oz.) package Brownie Mix

1 (15 oz .) can Pumpkin Puree

 

Preheat oven to 350°F, or according to your brownie package directions.

Combine brownie mix and pumpkin puree and mix well to integrate.

Transfer batter to a pan sprayed with cooking spray.

Bake according to brownie package directions for your chosen pan.

Allow to cool before cutting and enjoying or decorating!

It’s TIME for a Sweet Treat

Congratulations! You made it through another week. Let’s take a  collective moment and savor the sweetness of life..(translation)-let’s take a break and indulge if only just a little in the sweet treats of the season.

With Halloween fast approaching, many of us are sequestered to Trick or Treating in our own homes. Not exactly what we had in mind but we must make do and I have a suggestion to make it fun for you and your whole family. Why not put together some sweet treat boards filled with fun items for people in your home to indulge and enjoy. I have sourced a few inspiration boards for the adults and also for the children since Trick or Treating is supposed to be for the smaller ones but adults should not be denied a little bit of fun. Many of the boards are filled with ready made treats (sooo) no cooking required and when you do choose to cook you can add some festive cupcakes, cookies and candies for the season.

Melt some Chocolate and start dipping…Here’s a short list of items to consider BUT the options are endless:

Fresh Fruit: Apple, Bananas, Mango, Blueberries, Pineapple, Strawberries

Dried fruit & Nuts

Snacks: Chocolate Chip Cookies, Graham Crackers, Oreos, Biscotti, Rice Crispy Treats.

*Consider adding a side of Whipping Cream.

Pretty Up that Peppermint

Xmas and peppermint sticks seem like a match made in Heaven-(even the color combo on a peppermint stick screams HOLIDAY)!!! So what better way to pretty up a peppermnt stick  then by adding a thin coat of chocolate. It brings a whole new meaning to the term dip stick. Here are two ideas to get you motivated.  These make a perfect hostess gift or make in batches for a simple holiday party sweet. Try dunking the sticks in hot chocolate for a delicious treat -YUM!
